My journey into a plant based diet

It started with my 17month old daughter.  She's a vegetarian, all on her own.  Seriously, She loves hummus, avocado, lentils, rice, veggies, fruits and yogurt and spits out any type of meat we have tried to give her.  I guess this got me thinking.   I've tried all kinds of diets: whole 30, paleo, candida, detox but I have been resistant to trying a plant based diet for years. 


Its been about a week and I can already tell you that I feel lighter.  Its hard to describe but my body feels different. I have more energy and my skin seems brighter. Tonight I made a delicious curried chickpea with kale and roasted tomatoes with roasted cauliflower rice and it turned out delicious!
